 "Taste the Flavors of Australia: 15 Traditional Recipes to Savor Down Under" 


8. Kangaroo Steak with Red Wine Jus:


Ingredients:


4 kangaroo steaks

Salt and pepper, to taste

2 tbsp olive oil

1 onion, finely chopped

2 garlic cloves, minced

1 cup red wine

1 cup beef stock

2 tbsp butter

Fresh parsley, for garnish


Instructions:


Season kangaroo steaks with salt and pepper.

Heat olive oil in a large skillet over medium-high heat. Add kangaroo steaks and cook for 2-3 minutes per side for medium-rare, or until cooked to your liking. Remove steaks from skillet and set aside.

In the same skillet, add chopped onion and minced garlic. Cook until softened, about 3-4 minutes.

Pour in red wine and beef stock, scraping up any browned bits from the bottom of the skillet.

Simmer sauce until reduced by half, about 5-7 minutes. Stir in butter until melted and sauce is thickened.

Return kangaroo steaks to skillet, turning to coat in the red wine jus.

Serve kangaroo steaks drizzled with red wine jus and garnished with fresh parsley.
