 4. Lamingtons:

Ingredients:

250g butter, softened

1 cup caster sugar

4 eggs

1 tsp vanilla extract

2 cups self-raising flour

1/2 cup milk

3 cups desiccated coconut

1/2 cup raspberry jam, warmed


Instructions:


Preheat oven to 180°C (350°F). Grease and line a square baking pan.

In a bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Stir in vanilla extract.

Gradually fold in flour, alternating with milk, until smooth batter forms.

Pour batter into prepared pan and smooth the top. Bake for 30-35 minutes or until a skewer inserted into the center comes out clean.

Cool cake in the pan for 10 minutes, then turn out onto a wire rack to cool completely.

Once cooled, cut cake into squares. Dip each square into warmed raspberry jam, then roll in desiccated coconut until coated.

Place lamingtons on a wire rack to set before serving.
