6. Chicken Parmigiana:
Ingredients:
4 chicken breast fillets
Salt and pepper, to taste
1/2 cup plain flour
2 eggs, beaten
1 cup breadcrumbs
Olive oil, for frying
1 cup tomato sauce
1 cup grated mozzarella cheese
Fresh basil leaves, for garnish
Instructions:
Preheat oven to 180°C (350°F).
Season chicken breast fillets with salt and pepper.
Coat each chicken fillet in flour, then dip in beaten egg, and coat in breadcrumbs.
Heat olive oil in a large skillet over medium heat. Fry chicken fillets for 3-4 minutes per side or until golden brown and cooked through.
Transfer chicken fillets to a baking dish. Top each fillet with tomato sauce and grated mozzarella cheese.
Bake in the preheated oven for 10-15 minutes or until cheese is melted and bubbly.
